I use home made spices. My Biryani is made in two styles. Dum Biryani cooked on slow flame and mixed with rice and masalas and mutton all together. The dish is cooked layered with the meat and the dahi (yogurt) based marinade at the bottom of the cooking pot and the layer of rice (usually basmati rice or chinigura rice) placed over it. One portion means 1 kg rice and 1 kg mutton. This comes with one bowl of salad called kachumbar. (made of cucumber, onion, tomatoes) Serves 6 to 8 pax.
